Tested: When in Doubt, Bake Bread

Disclaimer: I regret to inform you that my camera has lost it's usb cable. Actually it's not lost, but sitting on a desk that is conveniently located in Melbourne, Australia. I (and my camera) reside in Canada. Therefore until I get another cable, this will have to do.
'Doodle bread' from design milk
I adapted this recipe from several recipes for plain bread. It's a white bread that is really good as a loaf or as rolls. There are no eggs or butter, but it ends up being really light and soft. I didn't expect it to turn out so well but it's now my official go to recipe for bread. It doesn't take long to make and it's pretty fail-proof!



Unbeatable Bread.
Ingredients:
3 cups all-purpose flour
1 cup warm water
1/2 cup warm milk
2 tsp. active dry yeast
1 tbsp. sugar
1 pinch salt
3 tsp olive oil

Method:

  • Add hot water to a stainless steel mixing bowl and dump it out to proof the bowl then add milk/water to the bowl.
  • Sprinkle in sugar, then sprinkle in yeast. Let stand for 5-7 min.
  • When yeast is foamy, add olive oil.
  • Add salt to flour and gradually mix flour into the liquid mixture, either by hand or using an electric mixer with the dough hook attachment. You should end up with a dough that no longer sticks to the sides of the bowl. 
  • You can either continue to knead the dough with the machine, or knead by hand, for another 5 minutes.
  • Form dough into a ball and tub with a little oil, then allow the dough to rest (I leave it in its bowl), covered, until it has doubled in bulk. (about an hour) When dough has risen, punch it down and knead a little more (2 min).
  • Divide into 2 and place in greased bread loaf pans then preheat your oven to 350°F. 
  • Egg wash the loaves (or use evaporated milk if you you're really egg-free) and bake for 20-25 min, until top is a bronzed (like those cheesy bodybuilders).

Makes 2 loves or about 24 rolls


Aside: I usually grease the pans with a little oil then dust flour over the surface. 

How do you know if it baked all the way through? Turn it over and tap on the bottom. Does it sound hollow? Ok then, good job.
